Food Photography #1: Creating texture & depth

Hello all, my name is Lee and I am honored to guest-post tips on food photography for Renaissance Culinaire. We are going to try to make this a monthly feature, so send us feedback with questions or suggestions on what we should photograph next!

Today's post focuses on the attention-sucking feature I like to call "black holes". While shadows are important to creating the illusion of depth, black spots with little-to-no detail will quickly suck a viewer's eye into its vortex of darkness (thus the nickname black hole). Here's how to identify and correct them:

In addition to the black holes, the light flattened the texture of the tuna and avocado chunks. So we added a foam-core reflector close-in, camera-right:

That filled in the large black hole in the center of the food, so you can see the green of the avocado and a bit of its texture. But I felt that we could get a little more texture in the food with another reflector positioned at the front of the lens and angled downward. The reflector was actually closer than illustrated below--it was actually resting on the lens hood. The result:

The second reflector added some specular highlights (a.k.a. "shiny spots" or "shine"), which is the other component of creating the illusion of depth. The effect is less dramatic in the photo as the light was dissipating even faster now as we approached 5pm in the city. The waning light also left one black hole that we could not fill in without resorting to flash (a future post topic).


The Tools: 1. foam-core reflectors (available at Michael's craft stores in various sizes for around $5); 2. Canon 5D MkII used for the food photos, (but any camera with a Manual mode works great); 3. Canon G12 for set-up shots; final settings for food shots are f/2.8 @ 40, ISO 2000.

Thanks for sharing your tips! I also like to take pictures of my cupcakes, and sometimes have problems with shadows.
I do not like to use flash, so the reflector technique that you commented could help me...I will try your idea!

I try to grow what we can and although we are omnivores we do not need to eat meat everyday. i also stick to unprocessed whole foods, buying in bulk helps me to save there. By the way nice post!!

This is a nice photo. I would suggest that you could take a picture of a herbs salad. Since it has different vegetables and fruits, it can show different colors. That would showcase a very attractive and mouthwatering salad. Thanks for giving a tip, I could use it for Christmas, with the food prepared on the table.

For me canon is easier to use than nikon. I really had a hard time with nikon. You just have to focus in one brand so you can maximize it or if ever you want to upgrade your camera it is easier for you to use the function because your familiar with the brand. By the way, nice shots.

I used to do a lot of photography and have only gotten back into it since becoming a dog walker. Learning new techniques that I can use to photographing or videoing my dogs is very useful indeed, thank you!

Interesting article. Nice to see in depth the technicality behind these promotional shots. I heard that some food photographers use cigarette smoke to create the illusion of steam. Seems so strange to attach that smell to those glossy shots.

I knew that the light is very important, but so far I didn't use foam-core reflectors. The final picture looks very delicious. How many pictures you made in total ?

Don't you think 2000 is pretty high for your ISO? Also, 40 shutter speed is kind of slow. Better to have used a tripod I think. The settings show that the room wasn't well lit. Maybe adding a flash with a diffuser could have been a good choice to lower the ISO and increase the shutter speed.

I would like to share my experience with Toma about the use of foam cor reflectors. These change the entire look of product that is photographed by optimising the light levet on various parts. I have used these reflectors for www.brigade-electronics.com.

My sister likes to cook and I like to take the pictures of her food, because it always looks tasty to me. The problem is on the pics I took, it didnt so delicious anymore. I didnt care about the black holes, but after reading this I know now that I have to pay attention on it.

This is luscious! A great looking food will always mean delicious, but it is never that all the time. Prestige also brings more people to taste foods as these.

Very nice photo"s Lee. I am a retired chef and appreciate the talent that photographers have doing these food photo shoots. I had many done when I was creating menus.

This is the first time I have come across your post and I was amazed to see someone putting in so much efforts and skills into food photography. I mean we as humans are just bothered about how the food tastes and not if there are any black holes in the cup or plate. You are doing some very skilful work for those who love to present their food in a beautiful and perfect way.

Since it has different vegetables and fruits, it can show different colors. That would showcase a very attractive and mouthwatering salad. Thanks for giving a tip, I could use it for Christmas, with the food prepared on the table.

Culinary photography is an art, and it's really important in the gastronomy industry. Because we eat with our eyes in the first place, then we taste the actual food. And in blogs, a perfect image is mandatory. I like how you explained this thing, and how you've managed to correct the black holes:)

I'm always struck when I see techniques like this, how back in the day they had to do all this with lighting or manually touching up the actual photograph after it was developed. Can you imagine doing that?

Actually makes me wonder if it would even be possible to do with the physical lighting in the space itself...

Great article, thanks for sharing. I remember some time ago I was surfing flickr for food photos as I am an amateur photographer (got an old Canon). So I remember this girl who also called herself an amateur photographer, but dare I say she was a real pro. She had there food photos and one especially, a photo of spaggeti and ketchup on plate with beans was fantastic. Since then I was trying to shoot food too but I failed all the time. So thanks for this post, I'll try to work on it.

Hello Lee, I think you've got some great tips for photographing food. People don't realise how tricky it can be to capture the right angles and colours of food, but with your simple tutorial it shows that it's achievable. Well done!
